Vega Vitamin Boost

Ingredients:

  • 3-5 tbsp. of Quoquos Coconut Oil Sunflower Lecithin
  • 6.7 fl oz. of organic vegetable juice (small bottle at room temperature)

Pumpkin Cranberry Chip Muffins

Servings: 24 muffins   | Preparation Time: 15 minutes | Cook time: 15-20 minutes

Ingredients:

  • 3/4 cup whole sugar
  • 1/2 cup QUOQUOS Virgin Coconut Oil, melted
  • 4 organic eggs
  • 2/3 cup whole milk
  • 2 cups pumpkin
  • 1 1/2 cups organic unbleached all-purpose flour
  • 1 1/2 cups whole wheat flour
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon vanilla sugar (optional)
  • 1 teaspoon grated orange rind
  • 1/2 teaspoon salt
  • 1 cup cranberries

Directions:  Line muffin pans with paper liners. Preheat the oven to 400 degrees F. 1. Beat sugar, Coconut oil and eggs together. 2. Whisk in milk and pumpkin. 3. In separate bowl mix together remaining ingredients. 4. Add to pumpkin mixture and stir just until combined. 5. Spoon into greased muffin cups (fill ¾ full) 6. Bake in preheated 400F oven for 15-20 minutes till lightly browned and firm to the touch.

    Coconut oil contains about 86% of saturated fatty acids. (Olive oil only 14%.) It increase the level of bad cholesterol (LDL) and clogs the arteries. So, good appetite!

Many studies have shown that coconut oil increases the total level of bad cholesterol (LDL) but also at the same time it very much increases the good cholesterol (HDL) level and actually reduces the ratio to a low risk level.     Coconut oil is one of the few foods that can be classified as a “superfood.” Coconut oil has been demonized in the past because it contains saturated fat. However, new data is showing that saturated fats are harmless. Many massive studies that include hundreds of thousands of people prove that the whole “artery-clogging” idea was a myth.
