A natural bounty of life-giving resources

The day was clear and bright. There were only a few passing whispers of clouds. Of course, the wind was blowing. Out on the prairie, it blew constantly.

The continual southern wind pushed the tall grass over. These gold-colored blades of native grass lay nearly to the ground. Overall, it was a gorgeous day out on the high plains.

As far as the eye could see, there was grass. It covered the hills as they rose slightly, then fell away into the shallow valleys they formed. Colorful wildflowers dotted the otherwise desolate landscape. They created yellow and purple swatches that also danced in the wind.

Europeans that first saw this land called it the American desert. Water was scarce, and living out here took a lot of work. And impossible for some. Many who tried to make homes out here suffered from “Prairie Madness,” a deep depression that caused many to leave and head back East.

White Feather was always happy to see a wagon headed east. “Good, go home. This is mine,” he would yell into the wind.

His feet dangled on either side of his pony. He scanned the horizon, looking. He and his hunting party were on the lookout for one specific animal. The beast that provided so much and which made living on this vast grassland possible.

“There,” said his brother, Eagle Claw.

White Feather followed his brother’s finger, and he saw it just at the edge of visibility. A billow of dust swirled in the sky. That was it. That is exactly what they were looking for.

He nodded to the rest of the hunting party - took a long drink from his water skin – and began to move.

They rode quickly until they were just on the other side of the hill. White Feather dropped from his horse and crawled to the top of the ridge. When he peeked over, his heart filled with joy. This was going to be a good hunt.

There, traveling through a valley carved by a long-dry creek bed, was the herd. The buffalo were not moving much now. They had taken a break to munch on the nutrient-rich grass. White Feather listened for a few moments to the grunts and snorts of these massive animals.

There were at least 300 buffalo in this herd—more than enough to meet the needs of the tribe. White Feather thought back to his childhood, back in the years when a herd of buffalo would take three days to pass by their camp.

Those herds were no more, and his people had to travel farther and farther to find smaller and smaller herds. The settlers had come with their guns. And they could destroy a herd in under an hour. They would take the tongue and the hide, leaving the rest of the animal to rot in the prairie sun.

Too many times, White Feather had seen this.

“Such a waste,” he thought. This mighty animal could grow to nearly 3000 pounds. And this, the largest land animal in North America, could run up to 35 miles per hour. They could turn their massive bodies on a dime and jump high into the air.

These hunts were dangerous yet necessary. He had often seen his brothers trampled and bones broken, trying to bring down buffalo.

White Feather drew deep breaths, looked over the herd, and formed a plan. The other members of the party peeked over the hill, and White Feather relayed the strategy. Each member picked a buffalo and mounted back on their waiting horses.

Once they were ready, White Feather let out a long cry. The party moved up and over the hill in unison, straight into the unsuspecting herd. With their targets picked, they rode close as the animals tried to scatter. Arrows and spears were let loose.

The hunt was on.

The American Bison – a gift from nature

Often, after such a hunt, the entire village would pack up and move close to the hunt site. Once there, the women and even the children would go about harvesting the animal. And they would harvest every part of this life-giving beast.

Skins would be used for clothing, blankets, and tepee coverings. The horns would become spoons and cups. And every organ of this creature would be eaten, with organs such as the heart, liver, kidney, spleen, and pancreas valued above all others.

That’s because there is value in the entire animal. Grass-fed organic bison is one of the most nutrient-dense foods available. Eating such nutrient-rich foods has been said to increase energy, vitality, and stamina. No wonder nothing was wasted.

Even the fat of these noble creatures was used as a unique and natural source of energy and vitality! The fat would be boiled down or “rendered” into tallow. This tallow would be used to add flavor and healthy fats to stews. It would also be used in skincare. Tallow even provided Native Americans with a rich source of essential Omega-3s.

Sadly, these animals were eventually hunted to near extinction. The big cities soon formed an insatiable appetite for the hides and tongues of the animal. This led to millions of animals being senselessly killed and wasted.

There are, however, many small family-owned farms in the United States that raise Bison. They take great care in maintaining healthy herds, which will again help us see the Bison as a valuable animal and part of our heritage.

And there is a company using every part of the animal to ensure no waste. They also ensure that the health benefits of such a nutrient-rich animal are available to all.

Whether you use it for cooking, fueling your energy, or in your skincare routine, this is some of the cleanest tallow you can find.

Grass-fed

Grass-fed

Rendered from a mixture of backfat and kidney suet, it is produced at a low temperature to keep all nutrients and helpful fatty acids intact.

This tallow can be used for high-heat jobs like deep frying and replacing oils and butter. It’s also rich in Omega-3s and other fat-soluble vitamins such as A, B1, D, E, K, and more. Here are three reasons why cooking with tallow can be beneficial:

  1. Stable and has a high smoke point – as mentioned earlier, this tallow can even be used for deep frying at high heat. This keeps all the nutrients intact no matter how you cook with it.

  2. Healthy fats – Tallow is rich in beneficial, healthy fats such as myristic, palmitic, oleic, and linoleic acids. These healthy fats can boost your Omega-3 levels, reduce inflammation, improve cardiovascular health, increase stamina, and energy levels and enhance collagen production, promoting joint and skin health.

  3. Neutral flavor – which means it will not alter the flavor of the food you cook with it. It imparts a mild, meaty flavor, and rumors abound that it makes the best french fries ever.

So, consider ditching your seed oils and using something genuinely beneficial. It’s the perfect way to cook for those practicing Paleo, Keto, and other similar diets.
