Just one more. Okay, another one, but that’s it. Damn, I ate the whole bag! Junk food is addictive, and not because we love the taste. It’s the chemicals hidden within that make these empty calories crunchier and sweeter, and light up our brain’s pleasure receptors like a scoreboard.

The bad news: Recent studies show that the more processed food you consume, the more you weight—regardless of how many calories you eat! But you can break free of junk food end your bad addiction and change for the good and healthy one.

The good news: Giving up chips might not be so good for you after all, new research suggests. A study claims that adults should make sure they get a daily dose of the vegetable oil that chips are often cooked in. The research revealed that basic cooking oil, popularly used for frying fish, cooking chips and roasting potatoes in millions of homes, is healthier than previously thought.

Did you know that Himalayan Pink Salt is considered to be the most attractive salts on earth? So, why not season it with a tortilla chip and make it the most flavorful tortilla "chipz" with health benefits? Well, chipz Happen did and it's crispy, salty and delicious.

Do you need a quick, delicious and easy recipe for dinner? 

You can make  Creamy Chicken Enchiladas in the morning and bake later for dinner. Add a simple green salad topped with black beans and tossed with a creamy cilantro dressing. For added crunch and flavor crush a few of our Parmesan Garlic or Spice-z chipz over the top.

Creamy Chicken Enchiladas  | Compliments of chipz Happen® foodie - Heather

INGREDIENTS:
4 Split skinless chicken breasts
1 dozen white corn tortillas
1- 26 oz. can cream of chicken soup
4 oz. can diced green chilies
8 oz. container of sour cream
2 cups of shredded Monterey Jack cheese
3 green onions thinly sliced
Garlic salt to taste
Canola oil

DIRECTIONS:

  • Preheat oven to 350

  • Boil chicken breasts, cool and then shred the chicken. (Tip: Use two forks to shred; put one in the chicken breast and use the other to pull apart the chicken).

  • Add green onion, a few shakes of garlic salt, 1 cup of cheese and ½ can of the cream of chicken soup. Set aside.

  • In a separate bowl stir together the remaining cream of chicken soup, 8 oz. container of sour cream and the diced green chilies. Set aside.

  • In a skillet heat up the canola oil; add just enough to coat the tortillas. Soft fry quickly just to soften the tortillas. Place tortillas on plate lined with a paper towel.
     

ASSEMBLE:

9 x 13 baking dish – put a little of the sauce to coat the bottom of the dish
Take one tortilla at a time and fill with about 2 tablespoons of the chicken mixture. Roll tightly and place face down in the baking dish. Repeat until tortillas and or filling is gone.
Will make between 8-12 enchiladas depending on how much filling is used.
Pour sauce over the enchiladas and top with the remaining shredded cheese.
Cover with tin foil and bake for about 20-25 minutes. Remove foil and bake until cheese is hot and bubbly.

About 6 years ago an opportunity was presented to be in a farmers market chain as a test and so the journey began.  It started with our Brother and Mom and as we say, Jason drove “Miss Daisy” up and down the Southern California searching for Co-packers to let them in their facility to “test” recipes. As time was ticking the trials and tribulations of hope and despair were culminating in to an almost hopeless outcome.  Until finally, they met a Co-packer that allowed them to run small production runs, work side by side until the recipes and manufacturing process received the stamp of approval from family and friends.  A delicious homemade style chip was created and alas ‘”chipz Happen” was born.
